Pak Choi tomato vegetables à la Didi

Ingredients for 1 servings:

  • 250 g pak choi
  • 7 cherry tomatoes
  • 1 m.-large shallot(s)
  • 1 tsp garlic salt
  • 1 tsp cayenne pepper
  • 100 ml vegetable stock
  • 1 tbsp sunflower oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash the pak choi and slice into thin strips. Peel the shallot and dice it into small cubes. Blanch the cherry tomatoes in boiling water, let them cool, peel them, and slice them. Season the tomato slices with garlic salt and cayenne pepper. Heat a pan with the sunflower oil and sauté the shallots. Add the pak choi and cook. Deglaze with the vegetable stock and reduce slightly. Stir in the cherry tomatoes, heat through, arrange on a plate, and serve.
