Pak Choi vegetables

Ingredients for 2 servings:

  • 250 g pak choi, cut into thin strips
  • 1 large carrot(s), finely diced
  • 250 g broccoli, cut into florets
  • 1 garlic clove(s)
  • 50 g cashew nuts
  • 100 ml soup
  • 100 ml coconut milk
  • some oil
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Sauté the garlic in hot oil, add the vegetables, pour in the soup and coconut milk, and cook for about 10 minutes. Add the cashew nuts, season, let it marinate briefly, and serve with rice.
