- 2 slices of bread (rye or mixed wheat bread)
- 2 slice(s) ham, raw or salami
- 2 slices of Emmental cheese
- 2 eggs
- butter

Fry the ham slices in a pan without fat over medium heat until crispy and set aside. Add a little butter to the frying fat. Toast the bread slices on both sides until crispy. Place the toasted bread on a plate and top with the ham and then the cheese slices. Bake the bread briefly in the oven at 120°C until the cheese just begins to melt. Meanwhile, season the eggs sparingly with salt, fry them scrambled or fried in the pan, and then top the sandwiches with the bread. If desired, sprinkle a little paprika or black pepper over the eggs. Tip: Instead of ham, you can also use thin, breaded pork fillet cutlets. In this case, however, it is more of a very tasty main course. A Palatinate Pinot Gris goes perfectly with it.
