Ingredients for 5 servings:

  • 2 eggs
  • 1 pinch of salt
  • 1 vanilla pod(s), pulp thereof, OR:
  • 1 packet of vanilla sugar
  • 1 tbsp, levelled sugar
  • 1 tbsp, levelled honey, preferably clear
  • 250 ml milk, 1.5% fat
  • 200 g flour
  • 100 ml carbonated mineral water

Instructions

Working time approx. 35 minutes; Rest time approx. 10 minutes; Total time approx. 45 minutes

for about 20 pancakes

In a whisking cup or bowl, combine the eggs, salt, vanilla, sugar, and honey and whisk lightly. Add the milk and flour and mix very lightly. Then stir in the water. Place a tea towel over the bowl and let the mixture stand for about 10 minutes. Heat the (coated) pan in the meantime (I add enough water to just cover the bottom of the pan and wait until it has evaporated). Stir the batter again. Pour batter into the hot pan (about enough so that the pancake has a diameter of 15 cm). As soon as the pancake starts to form even the smallest bubbles on top, flip it over (regardless of how cooked the bottom is) – this will give it a nice, even color and surface. Now, depending on your taste, add whatever you like and then serve. For those making WW – out of 20 pancakes, you can count on 4 points for 3 pancakes.
