Pancake Cordon Bleu

Ingredients for 4 servings:

  • 8 pancakes, store-bought or homemade
  • 8 tsp mustard, medium hot
  • 8 slices of cooked ham
  • 8 slice(s) cheese, e.g. Emmental
  • salt and pepper
  • 1 egg(s)
  • some water
  • 3 tbsp, heaped flour
  • 3 tbsp, leveled cornstarch
  • Breadcrumbs or breadcrumbs
  • Margarine or oil for baking

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Also delicious vegetarian

Spread a teaspoon of mustard on each pancake. Season with salt and pepper, and top each with a slice of ham and a slice of cheese. Fold the pancakes in 1/3 on one side and 1/3 on the other side. This creates a bar. If the bar doesn’t hold on its own, you can use a toothpick to help it stick. Mix the egg and water in a deep plate. Mix the flour and Mondamin on a large, flat plate. Add a generous amount of breadcrumbs, ideally in a casserole dish. Coat the pancakes in the flour mixture, dip them in the egg, and coat them in breadcrumbs. Heat a large frying pan with plenty of fat and fry the pancake cordon bleu until golden brown. Keep warm, if desired. Serve all pancakes hot. They taste best with lukewarm potato salad and a green salad.
