Pancake with Cactus Fruit and Mango (Lilli Becker)

The perfect pancake with cactus fruit and mango (lilli becker) recipe with a picture and simple step-by-step instructions.

Pancake:

  • 25 g Melted butter
  • 1 pinch Salt
  • 150 g Buttermilk
  • 1 Pc. Egg yolk
  • 125 g Flour
  • 0,25 tsp Baking soda
  • 0,5 tsp Baking powder
  • 1 pinch Salt
  • 30 g Sugar
  • 2 Pc. Protein

Covering:

  • 2 Pc. Peaches
  • 3 tbsp Sugar
  • 2 tbsp Noilly Prat

Fruit sauce:

  • 1 Pc. Mango
  • 1 tbsp Honey
  • 1 Pc. Lime
  • 2 Pc. Cactus fruits
  • 2 Pc. Passion fruit
  • 0,5 Pc. Lime, juice
  • 200 g Creme fraiche Cheese
  • 3 Pc. Sprigs of mint
  1. First mix the liquid ingredients (except for the egg white), then the dry ingredients separately.
  2. Mix the liquid into the dry mixture with the whisk. Fold the egg whites (not whipped) into the pancake mixture with the spatula. Let rest for 5 minutes. Bake on a low heat.
  3. Caramelize the peach and sugar and deglaze with Noilly Prat.
  4. Cut exact cubes about 1 cm in size from the mango, mix the not so nice rest in the blender with a little honey and lime juice.
  5. Peel the cactus fruits and press them through a sieve with the passion fruits. Add to the pan with the peaches and reduce, flavor with lime zest.
  6. Whip the crème fraîche with a little water.
  7. Place the pancake on the plate, the peaches a part, the mango on the pancakes, the fruit sauce next to it. Decorate with mint.
