Ingredients for 4 servings:

  • 3 m.-sized eggs
  • 30 g sugar
  • 1 packet of vanilla sugar
  • 150 g flour
  • ½ pack of baking powder
  • 1 pinch of salt
  • 100 g mascarpone
  • 100 g natural yogurt
  • 100 g milk
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Beat the eggs, sugar, and vanilla sugar with a hand mixer for about 10 minutes until very creamy. Mix the flour, baking powder, and salt together in a separate bowl, along with the mascarpone, natural yogurt, and milk. Briefly mix all of the above ingredients together. Heat a little oil in a pan and add enough batter to make a pancake about 10 cm in diameter. Fry the pancakes over medium heat for about 3-4 minutes on each side until golden brown. The pancakes can be eaten hot or cold and will keep in the refrigerator for about 2 days. Tip: They taste particularly good with maple syrup, Nutella, cinnamon sugar, etc., or just plain.
