Pancakes Del Pomodoro
The perfect pancakes del pomodoro recipe with a picture and simple step-by-step instructions.
Pancakes batter
- 250 g Flour
- 4 piece Eggs
- 0,5 l Sparkling water
- 2 Pinches Salt
- 2 Pinches Nutmeg
- 1 pinch Baking powder
Pancakes filling
- 4 piece Onion
- 200 g Delicacy boiled ham
- 2 tbsp Clarified butter
- 12 piece Panicle tomato, small
- Salt,
- Black pepper from the mill
- 1 tbsp Italian herbs (TK)
- 1 pinch Sugar
- Clarified butter for frying
- Parsley, finely chopped
- For the pancakes, put the sifted flour, the beaten eggs, the mineral water (or milk), the salt, the nutmeg and the baking powder in a large bowl. Mix with the whisk of a hand mixer at the highest level or by muscle power at the highest level with a whisk to form a smooth dough. Put it away, let it rest and make a note of the spot.
- For the filling, peel the onions, howl and cut into fine, half rings, the cooked ham into cubes. Heat the clarified butter in a coated pan and sweat the onions in it until translucent. Add the ham to the onions and continue to fry, stirring constantly. But: fry so that the onions are slightly crispy and the ham is still juicy!
- In the meantime, cut the washed tomatoes into eighths, add to the bacon and onions and sweat briefly. Season everything with salt, pepper, Italian herbs and the sugar. Put the pan aside after approx. 10 minutes, note the position.
- Heat the clarified butter in a second round pan (Ø 24 cm; coated). Beat the pancake batter again loosely using muscle power on a low level with a whisk. Bake 8 pancakes in portions, remove and place each individually on a baking sheet. Keep warm at 70 degrees in the electric oven. At the same time, reheat the vegetables. Then arrange the pancakes in portions, spread the tomato and onion mixture evenly over them, fold up, garnish and serve immediately.
- Koch-Sepp tip, the first: It will be 8 pancakes if the contents of a large “normal” soup ladle are poured into the hot clarified butter and baked.
