Pancakes with bacon

Ingredients for 2 servings:

  • 150 g wheat flour (type 550)
  • 150 g flour (wholemeal flour)
  • 500 ml milk
  • 250 ml mineral water
  • 3 eggs
  • 1 pinch of salt
  • 200 g smoked, streaky, diced ham

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

also available as a sweet version – with wholemeal flour

Gradually mix the flour with the milk and mineral water using a whisk and let it sit for about half an hour. Then stir in the eggs and add the diced ham. Heat the oil in a pan. Add about two small or one regular ladleful of batter to each pancake and cook (turn once). Serve the pancakes warm. They taste best with fresh cucumber salad or a green salad. Tip: The batter is just as suitable for a sweet pancake. Simply omit the ham and cook the batter as it is (tastes good with diced bananas; cook them in the batter and add a little sesame).
