Pancakes with Blueberries and Physalis Skewers
The perfect pancakes with blueberries and physalis skewers recipe with a picture and simple step-by-step instructions.
For the pancakes:
- 200 ml Yogurt
- 50 ml Milk
- 200 g Wheat flour type 405
- 1 Egg
- 1 Salt
- 1 Mineral water medium
- 1 Rapeseed oil has a neutral taste and odor, for frying
For the skewers:
- 10 Blueberries, per skewer
- 1 Physalis, per skewer
- 3 tbsp Sugar
Also:
- 8 Wooden skewers
- 8 Icing sugar for sprinkling
- Put the yoghurt, milk, egg and salt in a bowl and mix well with the hand mixer. Add the flour in portions. Mix everything together well. Then stir in the mineral water.
- Cover the dough and let it rest for approx. 40 minutes at room temperature so that the flour swells well. If the dough is too runny, you can add a little more flour … but … if the dough is too thick, you can also add a dash of mineral water.
- Heat OIL in a pan. Pour a ladle of batter into the pan and let it run on the bottom of the pan. Bake the pancakes until golden brown on both sides. Repeat the process until the batter is used up. Bake a total of 4 pancakes and keep warm.
- 1. Spread the sugar on a flat plate. Put the blueberries and physalis alternately on the skewers and roll them in the sugar. Put the pancakes on the plates, sprinkle with the powdered sugar and place two skewers on each.
