Ingredients for 1 servings:

  • 2 eggs
  • 20 g oat flour or wholemeal flour
  • 100 g cottage cheese
  • 10 g butter
  • 50 g berries, fresh or frozen
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • 1 pinch of salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk together the cottage cheese, eggs, and vanilla extract. In another bowl, combine the dry ingredients (flour, baking powder, and salt). Add the dry ingredients to the wet ingredients and mix. Heat a pan and melt the butter. Pour about one tablespoon of batter into the pan for each pancake and cook until golden brown on both sides. Serve with the berries and enjoy. Approximately 413 kcal per serving.
