Pancakes with Mince (Axel Stein)

The perfect pancakes with mince (axel stein) recipe with a picture and simple step-by-step instructions.

Pancakes:

  • 3 Pc. Eggs
  • 200 ml Milk
  • 9 tbsp Flour
  • Salt
  • 3 Sch. Bacon
  • 1 Pc. Onion red
  • Sunflower oil

Steak tartare:

  • 600 g Beef
  • 0,5 Pc. Freshly squeezed lemon juice
  • 2 tbsp Mustard
  • 2 tbsp Ketchup
  • Fennel green
  • Pepper
  • Salt

Salad:

  • 1 bunch Parsley
  • 1 bunch Tarragon
  • 1 bunch Chervil
  • 1 shot Olive oil
  • 1 shot Lemon juice
  • 1 tsp Pumpkin seed oil
  1. Mix eggs and flour, then add milk. Let stand briefly while preparing the filling.
  2. Cut red onions into strips and roast in the pan. Roast the bacon as well.
  3. Put the meat through the meat grinder and season with ketchup, mustard, salt and pepper. Add a little fennel green and mix well, set aside for a moment.
  4. Pluck parsley, chervil and garden cress and dress with olive oil, lemon juice and pumpkin seed oil.
  5. Bake three pancakes thinly and keep warm for a moment. Cut out 2 round cakes from each pancake and use the 6 most beautiful ones.
  6. Form three large meatcakes from the minced meat and fry them until crispy on one side.
  7. Place a pancake at the bottom of the plates, top with the tartare, then another pancake and then the salad. Drizzle with a little pumpkin seed oil.
