Pancakes with strawberry jam

Ingredients for 4 servings:

  • 250 g flour
  • 250 ml soy milk (soy drink), with vanilla
  • 250 ml carbonated mineral water
  • 1 pinch of salt
  • 1 tbsp sugar
  • 1 packet of vanilla sugar
  • Oil, for frying
  • ½ jar jam (strawberry)

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Combine flour, salt, sugar, and vanilla sugar in a mixing bowl and mix. Add the soy milk and mix everything together, then add the mineral water and mix with a hand mixer until all lumps are gone. Cover and let the batter rest for 1 hour. Brush a little oil onto a non-stick pan and heat. Once the pan is hot, pour a thin layer of batter into the pan and bake the pancakes. Keep warm until they are all baked. Then place on a large, flat plate and spread a thin layer of strawberry jam on top. Fold or roll up and serve immediately.
