Simple vegan banana spelt pancakes

Ingredients for 2 servings:

  • 200 g spelt flour, light
  • 250 ml almond milk (almond drink)
  • 2 tbsp agave syrup
  • ½ pinch(s) cinnamon
  • 1 banana(s)
  • ½ tbsp apple cider vinegar
  • ½ tbsp baking powder
  • Coconut oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Mash the banana with a fork until smooth. Whisk together all ingredients except the oil. Heat a little coconut oil in a frying pan, drop small portions of batter into the hot oil, and fry until golden brown on both sides. This batter makes a good base, and you can easily add apple pieces, nuts, chocolate chips, or berries as desired. Almond milk can be replaced with other plant-based milks. Coconut oil can be replaced with other plant-based fats. Agave syrup can also be replaced with honey or sugar, but using honey will make the pancakes non-vegan.
