Pancakes with tomatoes and herbs

Ingredients for 1 servings:

  • 2 eggs
  • 1 garlic clove(s)
  • 1 onion(s), red
  • 1 tomato(s)
  • 1 tsp parsley
  • 1 leaf of sage
  • 1 tsp basil
  • 1 pinch(s) tarragon
  • 1 tsp chives
  • 1 tsp cheese (smoked cheese), finely chopped
  • salt and pepper
  • 1 tbsp oil (rapeseed oil)

Working time approx. 10 minutes; Total time approx. 10 minutes

vegetarian, hearty and spicy

Finely chop the herbs, garlic clove, and onion, and dice the tomato. Place everything in a mixing bowl. Reserve some chives. Crack the eggs over the mixture and mix well. Season with salt and pepper to taste. Add the smoked cheese and continue stirring until foamy. Heat rapeseed oil in a small pan. Pour in the egg mixture, sprinkle the remaining fresh chives on top (it looks delicious, after all, it’s a feast for the eyes), and bake with the lid on at gas mark 1.5. You can also use the egg mixture to make scrambled eggs.
