Ingredients for 2 servings:

  • 1 handful of nuts (almonds, walnuts, cashews, etc.)
  • 1 clove(s) garlic
  • 1 pinch of sea salt
  • 2 pinches of pepper, ground
  • 1 tbsp, heaped fresh herbs, e.g. thyme, rosemary, oregano
  • 2 tbsp, heaped breadcrumbs
  • 2 tbsp vegetable oil (I prefer olive oil)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes

Classic “poor man’s parmesan substitute” in Italian style, tasty, crunchy and vegan

Using a blender or immersion blender, chop the nuts, garlic, and herbs (either individually or in combination, to taste) as finely as possible, almost to a powder. Add the breadcrumbs, salt, and pepper to the powder and mix. Place a pan on the stovetop. Add oil, heat over high heat, and stir to brown the powder. Pangritata makes a delicious vegan topping for many dishes. I like to sprinkle it over hot pasta or steamed vegetables.
