Ingredients for 4 servings:

  • 200 ml cream
  • 200 ml coconut milk
  • 2 tbsp sugar
  • 1 vanilla pod(s)
  • 20 g ginger, finely chopped, candied
  • 3 sheets of gelatin
  • 100 g cream, whipped

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Combine the cream and coconut milk with 2 tablespoons of sugar, 1 scraped vanilla pod with its seeds, and 20g of finely chopped candied ginger in a saucepan and bring to a boil. Soak 3 gelatin leaves, then add the squeezed gelatin to the liquid and let the mixture cool. Before the mixture sets, fold in 100g of whipped cream, pour into glasses, and refrigerate until ready to serve.
