Ingredients for 4 servings:

  • 1.2 kg potatoes
  • 1 m.-sized onion(s)
  • 250 g bacon, lean, diced
  • some oil
  • herbal salt
  • pepper

Crispy potato slices – everyday recipe from my grandmother

First, wash, peel, and slice the potatoes. For larger quantities, you may want to use a food processor. Soak the slices in cold water until ready to use. Then, peel and finely chop the onion. Heat a little oil in a large pan (preferably stainless steel or iron) and fry the diced bacon. Then, over high heat, add the finely chopped onion and the raw, drained potato slices. Fry the slices until brown and crispy, stirring occasionally, gradually reducing the heat. Just before serving, season with herb salt and pepper. It takes about 30 minutes for the potato slices to become nice and crispy. Tip: You can also use fatty bacon instead of lean bacon. Simply fry it in the hot pan before adding the other ingredients. In this case, you can omit the additional oil. For vegetarians: Panneschieven is a delicious side dish even without bacon.
