Ingredients
 

  • 2 Shallots
  • 2 Garlic cloves
  • 100 g Carrots
  • 100 g Celery bulb
  • 400 g Ground beef
  • 1 slice South Tyrolean bacon, approx. 10 g
  • 1 small can Pizza tomatoes
  • 100 ml Sieved tomatoes
  • 50 ml Dry red wine
  • 1 sprig Rosemary
  • 5 stems Thyme
  • 4 Sage leaves
  • Salt
  • Pepper from the grinder
  • 1 Bay leaf

Instructions
 

  • Peel shallots and garlic. Cut into fine cubes. Peel the carrots and clean the celery, also cut both into fine cubes.
  • Fry the bacon in a non-stick pan, add the mince and fry until crumbly in the fat. Add the diced vegetables and fry for a few minutes. Season with salt and pepper. Add red wine and simmer. Then add the tomatoes and their juice, as well as the strained tomatoes. Wash and add the herbs. Let the sauce simmer over low heat for about 1 hour. if necessary, add a little water every now and then and stir.
  • To serve, remove the bacon and herbs and season again with salt and pepper.
