Ingredients for 6 servings:
- 220 g flour
- 60 g flour (rice flour)
- 1 tbsp baking powder
- ¾ tsp salt
- 55 g sugar
- ½ vanilla pod(s), halved lengthwise and the pulp scraped out
- 5 egg yolks
- 480 ml milk
- Butter-vanilla flavoring, to taste (not too much!)
- 4 tbsp butter, melted
- 5 egg whites
- 340 g nuts (pecans), lightly toasted in a pan, chopped
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
(the vanilla pod does it)
Combine the flour, rice flour, baking powder, salt, and sugar. In a second bowl, combine the vanilla seeds and egg yolks. Whisk in the milk and vanilla essence. Add the egg mixture to the dry ingredients and mix. Stir in the melted butter. Beat the egg whites until stiff, but not dry, and fold into the batter. Fold in the nuts. Heat the waffle iron; bake the waffles until golden brown.
