Papaya with meat filling

Ingredients for 6 servings:

  • 2 tbsp oil (vegetable oil)
  • 1 onion(s), small, finely chopped
  • 1 clove(s) garlic, crushed
  • 450 g minced beef or lamb
  • 4 tomatoes, peeled and chopped
  • 2 chili peppers, chopped
  • 1 tsp salt
  • black pepper
  • 2 ½ kg papaya, halved and pitted
  • 25 g cheese, grated

Recipe from Jamaica

Heat the oil in a pan, sauté the garlic and onions for 5 minutes, then add the minced meat and brown. Add the tomatoes, chili, salt, and pepper, and continue frying until the liquid has almost evaporated. Fill the papayas with the meat mixture and place them in a baking dish. Add enough boiling water so that the papayas are about 2.5 cm deep. Then bake in a preheated oven at 180°C for 1 hour. Sprinkle with half the cheese and bake for another 30 minutes. Sprinkle with the remaining cheese before serving. If you don’t like spicy food and prefer a mild flavor, use only 1/2 to 1 chili pepper.
