PaPeto Goulash with Butter Spaetzle and Applesauce

applesauce
- 2,5 kilogram Apples sweetish
- 3 tbsp Sugar
- 350 ml Apple juice
- 1,5 tsp Vanilla extract
- 2 Splash Lemon juice
Butter spaetzle
- 500 g Durum wheat semolina
- 4 Eggs
- 1 tsp Salt
- 2 tbsp Butter
PaPeTo goulash
- 800 g Beef goulash
- 800 g Pork goulash
- Sweet paprika
- Curry hot
- Curry
- Cayenne pepper
- Salt
- Dried onions
- Garlic powder
- Rosemary powder
- Marjoram powder
- 250 ml Red wine
- 3 Red peppers
- 3 Peppers yellow
- 800 g Tomatoes
- 100 g Hot peppers
- 2 Garlic cloves
- Tomato paste

- Wash, peel, core and eighth the apples. Then melt the sugar in a saucepan until it caramelizes. Then put the sliced apples in the pot and reduce the heat until the sugar dissolves from the bottom of the pot. Now add the apple juice and bring the whole thing to the boil. Cook everything covered for about 15 minutes.
- Then drain the apples and collect the juice. Puree the apples together with 3 tablespoons of juice, vanilla extract and lemon juice and leave to cool. If you like, add a little juice, vanilla and / or lemon to taste.
Butter spaetzle
- Knead all ingredients into a viscous dough and use it to make spaetzle. Let the spaetzle cook in plenty of salted water for about 11 minutes. Then pour off the finished spaetzle and toss in 2 tablespoons of butter just before serving.
PaPeTo goulash
- First fry the pork goulash in a large saucepan. Make a spice mixture from the whole spices and season the goulash with it. Deglaze the meat with red wine and remove from the pot.
- Then fry the beef goulash, season and deglaze with a little red wine. After about 20 minutes, add the pork goulash again.
- Now clean the vegetables and cut into small cubes. Press the garlic cloves and add them as well. Season everything to taste and add more spices and / or red wine if necessary. Let everything simmer for another 1 ½ hours and thicken with tomato paste.
