Ravioli with vegetable and minced meat sauce

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 tbsp oil
  • 250 g minced meat, mixed
  • 2 carrots
  • 1 small zucchini
  • ½ eggplant(s)
  • 2 cans tomatoes, chopped
  • ½ cup crème fraîche
  • Herbs, Italian
  • some salt and pepper
  • 1 tsp, heaped vegetable stock
  • 400 g ravioli from the refrigerated section
  • salt water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Finely chop the onion and press the garlic clove. Heat the oil in a pan. Briefly fry the onion and garlic, then add the minced meat and cook. Meanwhile, finely chop the vegetables and add them to the pan. Fry with the minced meat for 5-10 minutes. Meanwhile, heat the water for the ravioli and add the salt. Cook the ravioli according to the package instructions. Add the tomatoes to the pan with the vegetables and minced meat, season with pepper, salt, vegetable stock, and Italian herbs, and simmer. Just before serving, stir in the crème fraîche.
