Paprika bacon à la Rosa

Ingredients for 4 servings:

  • 400 g pork back bacon
  • 2 cloves garlic
  • 2 tbsp, heaped paprika powder, hot

Instructions

Working time approx. 5 minutes; Rest period approx. 2 days; Cooking/baking time approx. 40 minutes; Total time approx. 2 days 45 minutes

Place the bacon, skin-side down, in a pot. Pour water over it and simmer for about 40 minutes, until the bacon is tender (test with a skewer). Crush the garlic. Remove the bacon from the water, let it cool slightly, then pat dry. Rub the bacon with garlic and toss in the paprika. All sides should be coated. Refrigerate for at least 2 days. Tip: Cut into thin slices and serve with onion rings and fresh bread.
