Ingredients for 2 servings:

  • 60 g Parma ham
  • 1 onion(s)
  • 1 bell pepper(s), red
  • 200 g pasta (spaghetti)
  • 2 tbsp oil
  • 100 ml whipped cream
  • 100 ml vegetable stock
  • 3 tbsp Ajvar, mild
  • 1 egg(s)
  • 1 egg yolk
  • 60 g Parmesan, grated
  • 2 tbsp chives, cut into rolls

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the ham into thin strips, peel and dice the onion. Trim and dice the bell pepper. Cook the spaghetti in salted water until al dente. Meanwhile, heat the oil in a pan and fry the diced onion and bell pepper. Add the ham strips and fry briefly. Pour in the cream and vegetable stock, add the ajvar, and simmer briefly. Mix the egg and egg yolk with about 4 tablespoons of the cream mixture from the pan, then stir into the sauce. Do not let it boil any further! Add the Parmesan cheese and season with salt and pepper. Serve garnished with the chives. Tip: Add more Parmesan cheese and ajvar if desired.
