Paprika Peanut Chicken

Ingredients for 4 servings:

  • 4 chicken breast fillets, approx. 180 – 200 g each
  • 300 g bell pepper(s), red, roughly diced
  • 150 g onion(s), roughly diced
  • 1 tbsp rapeseed oil
  • 1 tsp paprika powder
  • ½ tsp thyme
  • 300 ml chicken broth
  • 200 ml cream
  • 80 g peanuts, roasted, salted
  • Salt and pepper, freshly ground
  • possibly sauce thickener if required
  • some crushed peanuts for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Fry the bell peppers and diced onions in oil until lightly browned. Add the paprika and stir, then deglaze with the stock and cream. Stir in the thyme. Add the chicken breast fillets and simmer for about 15 minutes, until cooked through. Then add the peanuts. Remove the chicken and blend the sauce with a hand blender until smooth. Thicken with a little sauce thickener if desired. Season with salt and pepper. Return the chicken breasts to the pan and heat through. Arrange on plates and cover with the sauce. Sprinkle with crushed peanuts. Serve with rice.
