Peppers are known to contain plenty of vitamins. Which color brings the most of it, you will learn in this practical tip.
Vitamins in peppers: red is ahead
Paprika is a veritable vitamin C bomb in all colors.
- Red bell peppers provide the most vitamin C. 100 grams of it contains 140 mg of vitamin C.
- Yellow bell peppers come second with 120 to 130 mg of vitamin C per 100 grams.
- The green pepper brings up the rear here. But here too, 100g of the healthy vegetable still contains 115 mg of vitamin C.
- Incidentally, paprika not only contains vitamin C, but also plenty of beta carotene, a precursor of vitamin A.
- Here, too, the front runner is the red pepper with 2,125 micrograms of beta-carotene per 100 grams.
- In comparison: green peppers contain 530 micrograms of beta-carotene, which is significantly less of a healthy vitamin.
What the color code of peppers means
There are different varieties of peppers.
- Regardless of the variety, unripe pods are always green. They were harvested early and still contain a lot of chlorophyll – the reason for the green color.
- If stored properly, peppers will change color to yellow and then either orange or red, depending on the variety.
- During the ripening process, not only does the vitamin content increase, but also the sugar content.
- This is why red peppers taste sweeter than green ones. Ripe peppers, therefore, bring a little more calories with them.
- While 100 grams of green peppers bring just 20 calories to the plate, red peppers have 37 calories, which is still very little.
