Paprika – Salami – Muffins

Ingredients for 1 servings:

  • 215 g flour
  • 20 g oat flakes
  • 2 tsp baking powder
  • ½ tsp salt
  • 175 ml buttermilk
  • 60 ml rapeseed oil
  • 1 m.-sized egg(s)
  • 150 g salami, cut into small pieces
  • 1 red bell pepper(s), finely chopped
  • 100 g cheese (Emmental), grated
  • 2 tsp dried Italian herbs

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Delicious and quick to make, for 12 pieces

Grease a muffin tin or line it with muffin cups. Preheat the oven to 200°C (fan). Combine the flour with the oats, baking powder, and salt. In another bowl, whisk the egg with the buttermilk and oil. Then add the salami, paprika, cheese, and herbs and mix. Add the flour mixture and mix to form a batter. Pour the batter into the tins and bake in the oven for 25 minutes. Serve warm. Tip: If using muffin cups, let the muffins cool slightly, otherwise they will be difficult to remove from the cups.
