Cheese-Salami Muffins

Ingredients for 12 servings:

  • 50 g salami, finely diced
  • 280 g flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 60 ml oil
  • 2 eggs
  • 180 ml buttermilk
  • 50 g Gouda, grated
  • some paprika powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Preheat the oven to 180°C (top/bottom heat). Line the muffin tin with paper baking cups. Sift the flour into a bowl. Add the sugar, baking powder, and salt and mix everything together. Pour the oil into a bowl. Beat in the eggs and buttermilk. Gradually stir in the flour mixture until a smooth batter forms. Fold in the Gouda cheese and the salami cubes. Divide the batter among the muffins and bake on the middle rack for 20-25 minutes until golden brown. Test with a toothpick if done. Dust the muffins with a little paprika before serving.
