Ingredients for 2 servings:

  • 2 red bell peppers, diced
  • 3 tomatoes, skinned, pitted, split
  • 1 bell pepper(s), green, hot
  • 1 chili pepper(s), dried
  • 1 onion(s), diced
  • 200 ml cream or sour cream
  • 2 cl Metaxa
  • olive oil
  • Basil, fresh
  • 1 tbsp tomato paste
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Deseed and dice the peppers. Score the tomatoes and pour boiling water over them. Then peel, quarter, deseed, and cut the quarters into pieces. Deseed and finely chop the hot peppers. Dice the onion. Roughly crush the dried chili pepper in a mortar and pestle. Sauté the onion in olive oil and season with salt. Then add the peppers and fry for 2-3 minutes. Add the tomatoes and sauté everything for about 10 minutes. Then finely chop the vegetables with a hand blender. Mix the puree with the chili and tomato paste, Metaxa, and cream. Season with salt and pepper, and stir in finely chopped basil leaves just before serving.
