Parfait with Hint of Lime on Mango Mirror

- 2 Pc. Mango
- Lime juice
- 300 g Whipped cream
- 3 Pc. Egg yolk
- 1 Pc. Vanilla pod
- 3 Pc. Lime zest
- 3 Pc. Lime juice
- 4 cl Rum
- 75 g Sugar
- Red currant
- Raspberries
- Lime wedges
- 5 Pc. Mint leaves
- Separate the eggs and put them in a beater with the sugar. Beat the mixture over the water bath until frothy. Add the rum and the lime juice and also the lime zest. Beat again, then beat the mixture in a cold water bath until cold.
- In the meantime, whip the cream until stiff and carefully add the cream to the egg / sugar / lime mixture.
- Line a mold with cling film, add the mixture and freeze for about 8 hours. Just before serving, peel the mangoes and cut into pieces. Put in a tall container and puree with a hand blender. Add a few dashes of lime juice. Arrange the mango mirror on a plate, place 2 slices of parfait on each, decorate with mint, lime slices, currant and raspberry.
