Parmesan dumplings

Ingredients for 4 servings:

  • 2 slices toast bread, crust removed
  • 2 tbsp breadcrumbs
  • 40 g butter
  • 4 tbsp meat broth or vegetable broth
  • n. B. Nutmeg
  • 2 eggs
  • 40 g Parmesan

Instructions

Cut the toast into small cubes and mix with 2 tablespoons of breadcrumbs, 40g butter, 4 tablespoons of hot stock, and a pinch of grated nutmeg in a saucepan over medium heat for about 5 minutes. Remove from the heat and let cool slightly. Then mix in 1 whole egg and 1 egg yolk, along with the grated Parmesan cheese, and finally fold in the beaten egg whites. Now, using a teaspoon dipped in boiling water, scoop out small dumplings from the dough and let them sit in gently simmering water for 5-6 minutes. If the first test dumpling doesn’t work, you can improve the consistency by adding a little stock or breadcrumbs.
