Ingredients for 1 servings:
- 120 ml water, lukewarm
- 1 tsp sugar
- 0.2 cubes of fresh yeast, approx. 10 g
- 200 g wholemeal spelt flour
- 1 ½ tbsp Parmesan, grated
- 1 tsp salt
- 1 tsp sunflower oil
- ½ tsp garlic powder
- ½ tsp onion powder
- some pepper, freshly ground
- 1 tbsp olive oil
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 11 minutes; Total time approx. 1 hour 26 minutes
Pour the lukewarm water into a large bowl, add the sugar and fresh yeast, and whisk to combine. Add the wholemeal spelt flour, Parmesan cheese, salt, sunflower oil, garlic and onion powder, and some freshly ground pepper; knead briefly. Shape the dough into a ball using a rolling pin and let it rise, covered, for 1-2 hours, depending on the temperature, until the dough has roughly doubled in size. Pour the olive oil into a non-stick pan, add the ball of dough, and use the ball to spread the oil evenly in the pan. Turn the dough over and spread it evenly with your fingertips to cover the entire bottom of the pan. Cook the dough on the stovetop over medium heat (gas mark 4/6) for 7 1/2 minutes on one side and then for 3 1/2 minutes on the other side, until both sides are browned.
