Parsley root gratin

Ingredients for 4 servings:

  • 500 g parsley (parsley root) or parsnips
  • 500 g potatoes
  • 2 onions
  • 1 tbsp oil
  • 300 g whipped cream
  • 300 ml milk
  • 100 g cheese (Gouda)
  • 300 g ham, cooked
  • salt and pepper
  • 1 garlic clove(s)
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat oven to 200°C (180°C fan/gas mark 4). Peel and rinse the parsley roots and potatoes, then thinly slice or grate. Finely dice the onions and sauté in hot oil. Add the parsley roots, potatoes, cream, and milk and cook everything in an uncovered pan over medium heat for 10 minutes, stirring occasionally. Meanwhile, grate the cheese. Dice the cooked ham and mix with the vegetables. Season with salt, pepper, and nutmeg. Peel and halve the garlic. Rub the garlic clove into an ovenproof dish and grease it. Pour the vegetable mixture into the dish and sprinkle with cheese. Bake in the oven for about 1 hour 15 minutes. Serve with a green salad. Alternatively, you can use parsnips instead of the parsley root.
