Parsley sauce

Ingredients for 1 servings:

  • 30 g butter
  • 30 g flour
  • ½ liter vegetable broth and possibly milk
  • Salt
  • 2 tbsp parsley, chopped
  • 2 tbsp cream

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Make a light roux from butter and flour, then gradually add broth or half broth and half milk, whisking until smooth. Season with salt and simmer for 10 minutes over low heat. Just before serving, add 2 tablespoons of parsley to the light base sauce. 1 to 2 tablespoons of cream will enhance the sauce.
