Ingredients for 6 servings:

  • 1 ½ kg jacket potatoes
  • ½ cucumber(s)
  • 1 onion(s)
  • 4 eggs, hard-boiled
  • 1 bunch of chives
  • 200 g mayonnaise
  • 1 cup sour cream
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Peel the potatoes and slice them thinly. Grate the cucumber into fine sticks, finely chop the onion and eggs, and place everything in a large bowl. Mix the mayonnaise with the sour cream, season generously with salt and pepper, and toss well with the salad ingredients. Let stand for 2-3 hours. Season again before serving and toss with the freshly chopped chives.
