Ingredients for 6 servings:

  • 3 slices of toast
  • 4 eggs
  • 2 onions
  • 1 kg minced pork
  • 1 tsp mustard
  • 1 tbsp mustard
  • salt and pepper
  • Paprika powder, sweet
  • 3 tbsp olive oil
  • 4 radishes
  • 3 tomatoes
  • Parsley
  • 2 tbsp onions, crispy roasted
  • 1 tbsp tomato ketchup
  • 2 slices of cheese (Gouda)
  • 50 g cucumber(s), sliced
  • 2 tbsp remoulade
  • some salad

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

makes 20 meatballs

Soak the toast in water. Boil 2 eggs for 10 minutes. Meanwhile, finely dice the onions. Squeeze out the excess moisture from the toast. Knead together 2 eggs, the minced meat, the toast, onions, and 1 teaspoon of mustard. Season generously with salt, pepper, and paprika. Form the minced mixture into 20 meatballs. Heat oil in a non-stick pan. Fry 10 meatballs one after the other over medium heat for about 4 minutes on each side. Keep warm in the oven. Peel the eggs. Slice them. Cut the meatballs open. Slice the radishes and tomatoes. Tear the parsley. Fill half of the meatballs with egg slices, radish slices, parsley, fried onions, a dollop of ketchup, and mustard. Cut the cheese slices into smaller slices. Fill the remaining meatballs with tomato slices, cheese, cucumber slices, and remoulade. Arrange in paper sleeves on lettuce leaves.
