Ingredients for 25 servings:

  • 500 g wheat flour (wholemeal)
  • 500 g low-fat curd cheese
  • 2 eggs (size M)
  • 1 bag of baking powder
  • 2 tsp salt
  • 3 tbsp maple syrup, alternatively honey
  • ½ red chili pepper(s) (pitted and finely chopped)
  • poppy
  • sesame
  • Sunflower seeds

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

small quark wholemeal rolls

Place the flour, quark, eggs, baking powder, salt, honey, and chili in a mixing bowl and knead well. Let the dough rest for at least 1 hour, adding a little water (max. 50ml) if necessary and knead again. Shape the dough into equal-sized balls, about 25-30. Press the balls into poppy seeds, sesame seeds, sunflower seeds, etc., as desired. Place them on a baking tray lined with baking paper and place in an oven preheated to 200°C (fan oven) (pour a little water onto the bottom of the oven if the rolls are self-made). The rolls will be done after about 15 minutes. These rolls are a hit at every party for us. Instead of chili, you can also add fresh thyme or a little chopped rosemary to the dough.
