Ingredients for 1 servings:
- 1 roll of topping dough
- 80 g tomatoes, dried in oil
- 50 g creamy feta cheese
- 2 tsp pesto verde
- 50 g Edam cheese or Gouda, grated
- 1 egg yolk, optional

Remove the puff pastry roll from the refrigerator about 15 minutes before use. Preheat oven to 200°C (top/bottom heat). Roll out and spread with the creamy feta and green pesto. If necessary, you can also use cream cheese with herbs. Drain the tomatoes well from the oil, cut them into very fine pieces, and sprinkle them on top. Finally, sprinkle the grated cheese on top – this will help the pastry pieces stick together better. Carefully roll out the dough, starting from the short side. Using a sharp knife, cut into approximately 1 cm thick slices and place them on a baking sheet lined with baking paper. They look more appetizing if the rolls are brushed with runny egg yolk before baking. Bake for 15-20 minutes on the middle rack. Then let them cool slightly on the baking sheet. Makes about 15.
