Passion fruit cream

Ingredients for 8 servings:

  • 1 liter passion fruit juice
  • 2 sachets of pudding powder (vanilla flavor) for cooking
  • 6 tbsp sugar
  • ½ bottle of Cremefine whipping cream or lactose-free cream (amount according to taste)
  • 2 tbsp dark chocolate shavings for decoration

Instructions

Working time approx. 10 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 10 minutes; Total time approx. 6 hours 20 minutes

Summery light and very tasty with fruit salad – if the Cremefine is replaced with lactose-free cream, the cream is also suitable for allergy sufferers

Prepare the vanilla pudding according to the package instructions, but use passion fruit juice instead of milk and sugar. While the pudding is still hot, transfer it to a bowl, cover with cling film to prevent a skin from forming, and refrigerate for several hours to set. Once the pudding is firm, whisk it with a hand mixer until creamy. Then whip the Cremefine and fold it into the pudding. Refrigerate the cream until ready to serve, garnishing it with grated chocolate just before serving. We love to eat the cream with fruit salad, but I’ve also used it as a filling for cakes and éclairs.
