Pasta Artichoke

Ingredients for 3 servings:

  • 300 g pasta (e.g. tagliatelle)
  • 200 g cream cheese (16% light cheese also works)
  • 2 can/n artichoke hearts (from the can)
  • 1 small can of tomato paste
  • 60 ml sour cream
  • 3 cloves garlic
  • 1 onion(s)
  • Cayenne pepper
  • Parmesan or Grana
  • 2 tsp olive oil
  • herbal salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the onions and garlic and fry in olive oil. Quarter the artichoke hearts and add them to the onions. Meanwhile, put the pasta on the pan. Season the artichoke sauce well with cayenne pepper, herb salt, and pepper (the cream cheese takes a lot of the heat off) and fry everything until lightly browned. Add the cream cheese, sour cream, and tomato paste. Stir through and continue frying on very low heat. After about 10 minutes, check the consistency of the sauce and add as much water as needed to create a creamy sauce. Al dente – Add the pasta to the pan with the sauce, briefly increase the heat to high, and stir everything together. Serve on plates, top with some freshly grated Grana or Parmesan cheese. Very low in calories if you use light cream cheese!
