Ingredients for 4 servings:
- 500 g pasta
- 400 g scampi, raw, ready to cook
- 2 bell peppers
- 4 tomatoes
- 1 onion(s)
- 300 g cheese, grated
- 600 ml cream
- ½ tube(s) tomato paste
- 2 cloves garlic
- chili sauce
- salt and pepper
- oregano
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour
Cook the pasta in salted water according to the package instructions, then drain. Chop the tomatoes, peppers, and onions into small pieces. Fry the scampi in oil until cooked through – only takes 2 to 4 minutes. Combine the cream, tomato paste, salt, pepper, oregano, chili sauce, and crushed garlic in a bowl and mix well with a whisk. Place the pasta in a baking dish and spread a little of the sauce on top. Arrange the scampi on top, then the vegetables over the sauce. Pour the sauce over the sauce and sprinkle everything with cheese. Bake in an oven preheated to 180-200°C (top/bottom heat) for about 20 minutes. Of course, some people don’t like as much cheese, or even less sauce; for me, there can never be enough sauce and cheese in a baking dish.
