Pasta 'Greek Style'

Ingredients for 2 servings:

  • 250 g spaghetti or penne
  • 400 g chopped tomatoes (can)
  • 1 onion(s), red
  • 1 clove(s) garlic
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 2 sprigs rosemary
  • 5 sage leaves
  • 1 tbsp oregano, dried
  • Balsamic vinegar
  • 1 tsp olive oil
  • Salt and pepper, black
  • Paprika powder (rose paprika)
  • 100 g feta cheese
  • 40 g olives, black
  • 70 g ham, raw, diced
  • some basil, fresh

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Pasta with tomato sauce & delicious topping of olives and feta cheese

Cook the pasta “al dente.” Dice the onion and garlic. Finely chop the rosemary and thinly slice the sage leaves. Heat the olive oil in a pan and sauté the diced onion and garlic until translucent. Sprinkle the sugar over the pasta and let it caramelize briefly. Add the tomato paste and then deglaze with a dash of balsamic vinegar. Add the chopped tomatoes and herbs (oregano, sage, and rosemary). Simmer over low heat for a few minutes. Meanwhile, finely dice the olives and feta cheese. Mix both with the diced ham. Season the tomato sauce with salt, pepper, and paprika, then add it to the cooked pasta. Arrange the pasta on a plate, top with the olive, feta, and ham mixture, and garnish with a few basil leaves.
