Pasta in Ham-mushroom-cream Sauce, with Sheep’s Cheese, Tomatoes with Basil

Ingredients
 

  • 500 g Pasta
  • 150 g Dried mushrooms
  • 150 g Smoked and diced ham
  • 1 Onion
  • 2 Clove of garlic
  • 1 Chili
  • 200 g Cherry tomatoes
  • 150 g Sheep milk cheese
  • Basil
  • Salt
  • Pepper from the grinder
  • 150 g Processed cheese half-fat level
  • Dried oregano
  • Extra virgin olive oil

Instructions
 

  • Soak the dried mushrooms in warm water for half an hour, then briefly bring to the boil and drain. Then cut into small pieces.
  • Chop the onions and fry them briefly in olive oil. Add the chopped chilli, garlic and diced ham, continue frying for a short time. Season with salt (please salt carefully, the diced ham already bring plenty of salt) and pepper. Deglaze with half a cup of vegetable stock and add processed cheese.
  • Sprinkle with oregano and reduce the sauce a little.
  • Cook the pasta in salted water Aldente.
  • Heat a little olive oil, heat the cherry tomatoes, the feta cheese chopped by hand and the basil leaves. Please do not last long, the intensity is better maintained if it does not get too hot.
  • Drain the pasta, drain well and stir gently with the sauce.
  • Put on the plate and pour the warm tomatoes with feta cheese on top.
  • I've never done it like this before, it was a taste explosion, pure enjoyment!
