Ingredients for 2 servings:
- 300 g pasta
- 3 egg yolks
- 160 g Parmesan
- olive oil
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
First, cook the pasta as usual. In the meantime, grate the Parmesan cheese. Then, mix about 2/3 of the Parmesan cheese with the egg yolk and season. Heat a pan with olive oil and add the cooked pasta. Toss with the egg and Parmesan mixture, adding a little more olive oil if desired. Then arrange on a plate and sprinkle with the remaining Parmesan cheese.
