Pasta, leek and cheese pan à la Simone

Ingredients for 2 servings:

  • 1 onion(s)
  • Fat for frying
  • 200 g pasta of your choice
  • 500 ml vegetable stock
  • 2 tbsp sour cream
  • 1 tbsp herb melted cheese
  • salt and pepper
  • 4 spring onions

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel and chop the onion, and fry it in a pan with hot fat. Add the pasta and vegetable stock and season with salt and pepper. Bring to a boil and simmer for about 5 minutes over medium heat. Now add the finely chopped spring onions, 2 tablespoons of sour cream, and 1 tablespoon of herb cheese spread and mix well. Simmer for another 5 minutes over medium heat.
