Zucchini toast

Ingredients for 4 servings:

  • 8 slices of toast (also wholemeal)
  • 1 egg(s)
  • 2 m.-large zucchini, sliced
  • 1 can of tuna, plain (can be replaced with mushrooms, bell pepper(s) or similar)
  • 200 g cheese (e.g. Emmental, mountain cheese), grated
  • 2 large onions
  • 2 tsp oil
  • 2 cloves garlic if needed
  • Butter for spreading
  • salt and pepper
  • possibly broth, granulated
  • nutmeg

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Toast the toast and lightly butter. Peel and thinly slice the onions. If desired, fry them with the garlic in 1 teaspoon of oil – they should brown slightly. Then transfer the onions to a bowl. Heat another 1 teaspoon of oil in the pan and fry the diced zucchini. Add the tuna to the onions and season with salt, pepper, stock granules (if desired), and nutmeg. Allow the mixture to cool. Then mix in the egg and half of the cheese. Place on the toast slices, sprinkle with the remaining cheese, and place on a baking sheet lined with baking paper. Bake in a preheated oven at 180°C for about 15 minutes.
