Ingredients for 4 servings:
- 500 g pork shoulder, boneless, cut into 2-3 cm cubes
- 3 onions, diced
- 1 clove(s) garlic, crushed
- 3 tomatoes, peeled, pitted, roughly diced
- 1 pepper, green, pitted, very finely diced
- 1 tbsp oil
- Salt
- Black pepper, freshly ground
- ½ lemon(s), the juice
- 1 tbsp sugar
- 1 tbsp Worcestershire sauce
- 350 g tagliatelle pasta
- 150 g Cheddar cheese, grated
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes
with pork shoulder and tagliatelle
Heat the oil in a pan, sear the meat on all sides, and add the onions. Add the garlic, tomatoes, and chili peppers. Season with salt, pepper, lemon juice, sugar, and Worcestershire sauce. Cover and simmer over low heat for about 45-50 minutes. Cook the tagliatelle in salted water until al dente, drain, and stir into the stew with the cheese. Season to taste and adjust seasoning if necessary.
