Vegetable soup with tortellini

Ingredients for 4 servings:

  • 300 g minced meat
  • 1 liter vegetable broth
  • 1 can of pizza tomatoes
  • 450 g mixed vegetables
  • 250 g tortellini from the refrigerated section
  • 1 cup sour cream
  • 150 g cream cheese spread
  • 3 tbsp tomato paste
  • salt and pepper
  • Herbs
  • possibly sauce thickener

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Brown the ground beef in oil, add the broth and tomatoes. Add the vegetable mixture and simmer for 20 minutes. Three minutes before the end of the cooking time, add the tortellini and bring back to a boil, allowing the tortellini to cook for about 2 minutes. Stir the sour cream, cheese, and tomato paste into the soup and season with salt, pepper, and herbs to taste. Thicken with a sauce thickener if necessary.
