Pasta with coarse sausage, peppers and tomatoes

Ingredients for 4 servings:

  • 250 g pasta of your choice, preferably farfalle or fusilli
  • 1 tsp olive oil
  • 4 sausages, coarse
  • 1 bell pepper(s), cut into not too fine cubes
  • 1 m.-sized onion(s), cut into rings
  • 2 cloves garlic, sliced
  • 2 small cans of chopped tomatoes, 400 ml each
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • possibly Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Cook the pasta in salted water. Make sure you cook the pasta for two minutes less than the package tells you to. Drain the pasta in a colander and set aside. Pour the oil into a slightly higher pan and sear the coarsely chopped sausage until it is cooked through and really brown and crispy. Remove the sausage and fry the bell pepper, onion, and garlic slices in the sausage oil for about 2-3 minutes. During this time, cut the sausage into small pieces; the pieces can be larger or smaller, depending on your taste. Now add the chopped tomatoes and then the sausage straight back in. Simmer on low heat for about 10 minutes, stirring occasionally. Now add the oregano, salt, and pepper to the sauce. Finally, add the pasta and cook until al dente. If you like, you can add more seasoning to taste and sprinkle Parmesan cheese over the pasta to finish.
